Granny’s Nutty Wonders

Get baking and create a homemade afternoon tea treat. This recipe first appeared in our old printed newsletter back in 1994 but the recipe originally came from John Russell’s grandmother. Regardless of the source, they are delicious enjoyed with a cup of Nerada Australian grown pesticide-free black tea.

Ingredients

115g butter
3 tbsp white sugar
1 extra-large egg
1 cup self-raising flour
1 cup dates, chopped
1 cup pecans or walnuts, broken
½ tsp vanilla extract
3 cups cornflakes

Method

  1. Preheat oven to 160C and line 2 baking trays with baking paper.
  2. Cream butter and sugar in a large bowl. Add egg and beat with a large spoon until smooth. Stir in flour, then add dates and nuts. Stir to combine. Place cornflakes in a separate shallow bowl. Spoon teaspoonfuls of mixture into the cornflakes and roll around until completely covered.
  3. Place on the baking tray, allowing space between each. Bake for 20-30 minutes or until crisp and golden.
