Quick & Easy Lamington Recipe

Barbecues are a true blue way to celebrate Australia Day and lamingtons are an ideal make-ahead dessert to serve. No one wants to be stuck in the kitchen with the oven on baking a sponge, so we’ve taken a leaf out of Donna Hay’s book and used a store-bought cake for our lamingtons.

Ingredients

1 x 20cm x 30cm store-bought sponge cake
3¼ cups icing sugar
½ cup cocoa powder
⅓ cup boiling water
75g butter, melted
2 cups desiccated coconut

Method

  1. Cut the sponge cake into 15 squares.
  2. Sift together the icing sugar and cocoa. Mix with the boiling water and melted butter.
  3. Place the desiccated coconut in a bowl. Using 2 forks to hold the sponge squares, dip into the chocolate mixture and coat in the desiccated coconut. Allow to set on a wire rack. Makes 15.
